Bubble tea comes from English and translates as “bubble tea”. It consists of tea, syrup and topping. These are small pearls that float in the tea and are absorbed with the straw. They come in different varieties: the so-called “popping bobas” are jelly-like beads made of algae starch. They are filled with fruit juice or syrup and burst in the mouth. There are also black, rubbery globules. They are called tapioca pearls and are extracted from the tropical cassava plant. Usually you drink bubble tea cold with ice cubes, but there are also warm variants.

Bubble tea was invented in Taiwan in the 1980s. At that time it was still called pearl milk tea and was not as colorful as it is today. It was supposedly invented because the tea houses wanted to get children excited about tea drinking again. For this, they took sweetened tea, added milk and, as a special extra, tapioca pearls. Until then, these gummy pearls were eaten pure as a dessert. Sweetened with honey or maple syrup, the adults added them to the tea – as a reward for drinking, so to speak. All components of this original variant are based on natural ingredients. To date, this classic bubble tea is a popular snack in Asia. In the 90s, pearl milk tea then came from Asia to Australia, the USA and Canada. Here the drink became sweeter and more colorful.
