The well is also covered with agave leaves, which serve as an insulator and give the meat its characteristic taste. A container is placed on the stone bed, in which the juice that the meat gives off during cooking is collected (this juice is called consommé). The entire furnace is covered, usually with the same leaves, with stones and, finally, with a layer of earth. A fire is lit above the stove, in which various materials are used (usually logs of ocote, various cacti and dried zacate, and even charcoal) and left to boil for about 12 hours.

Traditionally, barbacoa is a preparation of meat (usually sheep, goat or beef), stewed in an underground oven until very tender and juicy. Today, the term is also sometimes used for a similar preparation, which is prepared on a stove or in a slow cooker.

Our English term barbecue comes from the Caribbean Indian word barbacoa , but despite their common origin, these two words do not denote the same thing.
